This bean soup mix began our Ol' Geezer line of soups. We call it the "Original" bean soup mix. A generous blend of Baby Lima, Pinto, Kidney, Great Northern, Black Turtle, Red, Green & Yellow Peas and special seasonings featuring our X-Course Seasoning (all natural).
Gluten Free and Low Sodium
My favorite way to make our Original Bean Soup is in my Instant Pot.
Step 1: For the meat we have plenty of choices, while the packaging recommends a ham hock, shank or a meaty ham bone, I like to leave my options open: Try Baby Bella mushrooms quartered up, or even left overs are great. Such as, shredded chicken or turkey or even diced up ham. One of my favorites is a roast. Now when using a roast I suggest setting it out an hour before you are ready to cook, season it with our X-Course Seasoning or your favorite course salt seasoning, and let it come to room temp. Then turn on the instant pot to saute and sear all sides of the roast, than proceed to Step 2.
Step 2: Rinse the beans and add them to the pot, place the recommended amount of water* in (10 cups.) *Broth is not necessary for any of our soups, because the seasoning packets provide enough flavor, but if you would like to add broth, I suggest only substituting half the water for broth and trying some flavors you haven't before like mushroom. www.betterthanbouillon.com has an amazing variety of bases to choose from.
Step 3: Add the vegetables, carrots and celery are what is recommended, 1 cup each chopped. You can be creative by tossing in potatoes, zucchini, squash, cabbage or even brussel sprouts. The possibilities are endless.
Step 4: Choose either the Bean/Chili or Soup/Broth setting (Normal/High) and set the timer for 30 minutes. Seal the instant pot and let it do its job. When the timer goes off, let it NR (natural release) the pressure, and add the seasoning packet provided.
I love all of our soup mixes because they are great the way the recipe recommends, plus they are a convenient way to use what you already have that you don't want to go to waste. Have fun while making them and it is OK to go outside the box :)
